Mary G's Tomato Aspic with Cucumber Sauce

     This is another recipe from that excellent cook, Anonymous from Arkansas. A word of warning: 2 teaspoons of Tabasco sauce are a lot of heat

.

Ingredients:
with Cucumber Sauce

2 envelopes Knox gelatin (unflavored)
1 cup cold water
1 cup ice water
2 8-oz. cans tomato sauce
1 teaspoon sugar
2 teaspoons Tabasco sauce (optional)

     Sprinkle gelatin over cold water in a saucepan. Place over low heat and stir constantly until gelatin dissolves, 4 to 5 minutes. Remove from heat and add ice water. Pour into a 4-cup mold. Chill until firm. Unmold onto lettuce leaves and serve with:

Cucumber Sauce

1 cup mayonnaise
1 cup chopped cucumber
2 tablespoons chopped fresh chives
1 teaspoon chopped parsley
1/2 teaspoon salt
1/2 teaspoon dill weed

     Combine and mix well
