Italian Fried Peppers
You will be amazed at the deliciousness of this simple dish of fried peppers. We sometimes think that, to be really good, a dish should have at least ten ingredients. But the best things are often the simplest. Think of a ripe tomato still warm from the sun, eaten only with salt: the most wonderful taste in the world. Think of cold watermelon on a hot day. Or just-picked sun-warm black raspberries. Food doesn't get any better than that. And these peppers are pretty good too.
Ingredients:
4 red or yellow bell peppers*
olive oil
salt to taste
Cut peppers into vertical slices 1/2 inch wide. Cook them over moderate heat until they are soft with a few browned edges. The longer they cook without becoming dark brown or burned at the edges, the sweeter they will be.

*Do not use green peppers; they are not sweet enough.
