MEAT 'N FRITOS

Carol Frazer has sent us a recipe that goes back a ways in her family. It's NOT a diet recipe, so I haven't tried it, as I'm still in Weight Watchers. Carol's recipe is a dandy one for everyone who has (1) not started a diet, or (2) started a low-carb diet but got sick (some people do get sick on those low-carb diets -- one woman I know wound up in the hospital), or (3) tried a traditional type diet and got sick of sacrifice, or (4) tried a self-invented diet and fudged so much the diet died a natural death. Until this year I have always fallen into category 4: I'm a great fudger. I like fudge too, come to think of it.
Carol says, "One of my father's favorite recipes was 'Meat 'n Fritos.' It was great and easy for Saturday or Sunday night dinner when everyone was tired from too much going over the weekend. From the title I expect it was originally from the Frito-Lay Company."
The way I read the recipe, the sauce isn't cooked after the tomato paste goes in. It is merely heated to the temperature you want and spooned over Fritos.
Ingredients and Method:
1 lb. lean ground beef
1/4 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon Accent
1/4 teaspoon ground coarse pepper
trace of garlic salt
1/4 teaspoon chili powder or to taste
1/4 lb. Velveeta cheese
6 oz. tomato paste
6 oz. water
Fritos
Lightly brown meat and onion and pour off as much fat as possible. Add seasonings. Cube Velveeta and cover it with meat mixture while hot. When cheese is melted, stir in tomato paste and water. Vary quantity of water to get consistency about right to ladle out and put on Fritos. Heat and serve over Fritos, as you would over rice.
