Judy B's Chicken Tandoori
Note that this dish needs to be marinated for 24 hours. I usually neglect to notice such things and get upset when I go to fix the un-marinated dish a few minutes before dinner. Of course that will not happen to you, because you have this reminder.
It's also another fine recipe from Anonymous in Arkansas.
Ingredients:
4 to 5 lbs. chicken pieces
4 oz. plain yogurt
1 tablespoon tomato paste
1 onion, chopped fine
1 large clove garlic, minced
1 bay leaf
1/2 teaspoon turmeric
1/2 ground ginger
1/2 teaspoon chili powder
1 teaspoon curry powder
1 teaspoon paprika
2 teaspoons vinegar
juice of 1 lemon with some grated rind
salt and pepper to taste
Mix well all ingredients except chicken. Skin chicken pieces and prick them with a fork in several places. Put in large bowl and pour over other ingredients. Cover and marinate 24 hours. Remove from marinade. Broil 7 minutes on each side, taking care that the broiler rack is in the bottom third of the oven, then bake 20 minutes at 350 degrees.
