Chesapeake Garden Chili
Chesapeake Garden Chili is a dish I invented for my husband, who is not that crazy about regular chili. (I think it's the cumin.) A chili purist would think I shouldn't even call this chili, but it's good, of course it's healthy with all those vegetables, and Bill and I love it. My notes on the recipe card say, "fairly low fat, very good and fresh tasting."
Ingredients:
serves 4
1 large clove garlic
1 tablespoons oil
1/2 lb. lean hamburger
1 medium onion, minced
1 can crushed tomatoes
1 medium green pepper, minced
2 cups celery, minced
1 to 2 tablespoons chili powder
3 tablespoons soy sauce
1 tablespoon frozen apple juice concentrate
2 cups fresh or frozen green beans
2 cups corn
salt to taste
Cut the clove of garlic in half lengthwise, remove the green sprout, and brown it in a 2 tablespoons of oil in a nonstick skillet. Discard garlic, brown hamburger and onion in the fat. Pour off any pourable fat. Add crushed tomatoes, green pepper, and celery. Season with chili powder, soy, and apple juice.* Simmer mixture for 20 minutes. Add 2 cups fresh or frozen green beans, cut up, and 2 cups corn. Simmer for 15 more minutes, add salt to taste, and serve.
