MILLION DOLLAR PIE*
Serves 4 to 6
This special recipe is from my sister-in-law, Betty Langlois. She served it to us in her home at Hialeah, Florida, during the nicest New Year's Eve I've ever experienced. It was a family gathering, and my husband Bill and I were made to feel so loved and welcome. Part of the love and welcome was Betty's pie:
1 regular pie crust shell, baked
1 cup powdered sugar
1/4 cup flour
1/4 cup butter or margarine, softened
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
2 cups Cool Whip
1 cup crushed pineapple, drained
1/2 cup pecans, chopped
1/4 cup maraschino cherries, diced
In a large mixing bowl, stir together powdered sugar and flour. Cut softened butter into it and mix well. Add egg, vanilla, and salt and beat until smooth and creamy. Fold in remaining ingredients, one at a time, mixing well after each addition. Pour mixture into baked pie shell. Chill three hours or until set.

* A free hint for a million-dollar product: set the butter out to soften an hour or more before you make the pie.
